Thai food has the wok hei of the old school SG hawker food. Go Thai Chinatown, see the cooking, big flame and stir.

So locals tribal villagers cook whatever they did for their own home folks
Some times they cook blood 🩸 I don't dare to eat
Other times the meat too big I don't know to eat
Usually they don't do street hawker styles 🤗🫣
Else I think I can't eat

Best meat I had is back in Laos. Wake up 8am, on a 16c morning, cold and munching street bbq pork on bamboo skewer + sticky rice.
